Blueberry Cottage Cheese Pancakes

Blueberry Cottage Cheese Pancakes presented by The Inn Keeper's Place Bed and Breakfast

Makes 18 pancakes (4")

  • 1 1/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups blueberries

Butter for griddle or Pam spray.

Whisk together flour, sugar, baking soda, and salt in medium bowl.

Stir together sour cream, cottage cheese, eggs, and vanilla in large bowl.

Add flour mixture, stir until just combined.

Gently stir in blueberries.

Heat oven to 200. Heat a griddle over medium heat. Butter griddle lightly.

Spoon level 1/4 cup batter onto griddle for each pancake.

Cook until lightly brown and bubbles begin to form 3-4 minutes.

Turn and cook other side. Keep in warm oven on baking sheet until ready to serve.

Garnish with berries and citrus wedges.

These sound great. Will be trying them tomorrow morning. Zack and I are going to make a pancake breakfast for Grandma.

100 Words

Write 100 words (exactly) every day for a month. No missed days, no writing ahead or catch ups. Can you do it?

I like it but I can see it will be harder than it appears. Anyone who has taken it upon themselves to create a blog or journal entry every day will know it is hard to write something every single blasted day. :) Plus the hardship of being on a budget of 100 words, no more or less.

Try it unofficially for a week and see if you still want to take on this project, with the site.

2005 Free CA Tax Clinics

Free CA Tax Clinics

Too late for this year, but this is a link to keep on hand for next year. If your income is low you can get a volunteer CA to do your taxes for free. Most people with low income will have a simple tax return anyway, but if you are a freelance writer this may be a good way of catching write offs you didn't know about.

Each year since 1969, Free CA Tax Clinics are held across Ontario from mid-February until the end of March. Hundreds of volunteer Chartered Accountants and their associates help thousands of low-income people by preparing their income tax returns, free of charge.

To qualify for this free tax return assistance, total household income must be below $22,500 with dependents or below $15,000 without dependents. Also, individuals with rental income and/or business income do not qualify for the Free CA Tax Clinics program, regardless of the amount of income.

I think it's wonderful. I found the link today while looking for a friend of my brother who is a CA. He was one of the volunteers listed for the 2005 program. Yeah Richard. :)

It's been ages... but I never went far.

I've kept my column at BackWash going, more or less, mostly less. I was writing for a friend's adult site but that was called off. So now I'm a free agent once again. I still write non-adult and have a job on the side. But, the adult writing has faded away like most of my relationships with men. Why do they do that?

At the start they can't get enough of you, fill you with how much they desperately love you, must have you, etc. Then, without warning you just never hear from them again. If you bother to send an email to check in case he was hit by a bus, there is a slight chance he will send a short reply, saying nothing of anything. Men seem to be pretty small minded and shallow. But, I'm nothing if not optimistic and I still hope I'm just not meeting the right men. Somewhere there are real people out there who happen to be men.

Anyway, I am putting up a new site. It's going to be a site for writers. I will also attempt to get back to keeping up here. Though, see above, I am pretty much dateless. I don't even mind much at this point. Kind of nice to get away from it all. I'd try again if I found someone who seemed sincere about being with me. I'm not a lightskirt, I just play one for fun.

Dead Evil for Zack

My nephew wanted a web page for the game he and a friend are inventing. It's going to be called Dead Evil. Mainly the action is shooting bad creatures in some kind of dark, evil world. At least he will be busy for the summer.

I think I can find him a more gorish looking font. Not sure gorish is a word, root for gore. I don't think he cares a lot about correct spelling though.
